31 Days of Cleaning Up My Crap

Throughout the month of October I will be doing 31 Days of writing.

The Nester started this many years ago, and have encouraged others to do the same. The way it works is each blogger picks a theme and writes about that subject each day throughout the month. I have decided to join in and my theme will be “31 Days of Cleaning Up My Crap.” Now I know many of you are probably thinking, “What in the world?” Haha. However, life can be hard, messy, and if we are honest some days just plain crappy.

 These past nine months of my life have been the hardest I have ever had to experience. Since having my colon removed I have had to deal with more crap than I could ever have imagined both literally and metaphorically. Although, in the hard there has been plenty of grace and laughter and I hope to share a bit of my journey with you. And in the process, hopefully offer you some solace in the midst of the “crap” you may be facing.

Fall Favorites Day 17 – Pumpkin Cake Recipe

Earlier this week, my mom made a Pumpkin Cake and was delicious! It is the best cake I have had in a long time so I thought I would share it. If you try it let me know what you think. Also, if you have a favorite fall recipe send it to me here and I might post it on the blog next week. 🙂

Ingredients:

2 cups white sugar

1 1/4 cups vegetable oil

1 teaspoon vanilla extract

2 cups canned pumpkin

4 eggs

2 cups all-purpose flour

3 teaspoons baking powder

2 teaspoons baking soda

1/4 teaspoon salt

2 teaspoons ground cinnamon

1 cup chopped walnuts (Optional)

 Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12×18 inch pan. Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.

In a large bowl combine sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a time. Gradually beat in flour mixture. Stir in nuts. Spread batter into prepared 12×18 inch pan.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

For icing the recipe recommended a cream cheese icing but we just used a confectioners sugar glaze

Fall Favorites Day 16 – Christmas in October

I love Christmas music and beginning in October new Christmas music starts releasing. Today, Francesca Battistelli released her first Christmas album and it is AMAZING! Even though it is not time to play Christmas music yet, I have downloaded it and already started listening. So good! Be sure to add this to your must have Christmas albums of the year. Fall Favorites Day 15 – Apple Cider

There is nothing better than a warm mug of apple cider on a fall day! Below is an easy way to make cider. Hope you enjoy!

Ingredients:

6 cups apple cider

1/4 cup real maple syrup

2 cinnamon sticks

6 whole cloves

6 whole allspice berries

1 orange peel, cut into strips

1 lemon peel cut into strips

Directions:

  1. Pour the apple cider and maple syrup into a large stainless steel saucepan.
  2. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
  3. Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
  4. Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

I always look forward to the month of October because I know that the weather is going to become cooler. I love it when it is cool enough to pull out my boots and scarves again. If you can, take some time this afternoon to go outside, take a walk, and enjoy the scenery around you. Happy Sunday!

Fall Favorites Day 10 – Apple Pie

Apple pie is one of my favorite fall desserts. It tastes great with a cup of  apple cider or coffee. Below is the recipe! 🙂

Ingredients:

1 recipe pastry for a 9 inch double crust pie

1/2 cup unsalted butter

3 tablespoons all purpose flour

1/4 cup water

1/2 cup white sugar

1/2 cup packed brown sugar

8 granny smith apples – peeled, cored, and sliced

Directions:

  1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
  2. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
